The Sous Chef plays a critical leadership role by supporting the Executive Chef in the day-to-day operation of the kitchen while developing team members and ensuring every dish reflects the standards of Harvest in the Gardens.


Position Overview

The Sous Chef is responsible for supporting the daily operation of the kitchen by supervising culinary team members, coordinating food production, and maintaining the highest standards of food quality, consistency, sanitation, and kitchen organization.

Reporting to the Head Chefs, this role provides day-to-day operational leadership, coaches culinary team members, oversees food preparation during service, and ensures recipes and presentation standards are executed consistently. The Sous Chef works closely with Line Cooks, Prep Cooks, Stewards, and restaurant leadership to deliver exceptional culinary experiences.

Areas of Stewardship

Culinary Excellence Stewardship

The Sous Chef is responsible for ensuring every menu item is prepared with consistency, quality, and attention to detail.

Responsibilities include:

  • Supervise food preparation during daily operations.
  • Ensure recipes and presentation standards are consistently followed.
  • Monitor food quality before service.
  • Maintain appropriate food temperatures and handling procedures.
  • Support the Executive Chef in delivering exceptional culinary experiences.

Team Stewardship

  • Supervise and coach culinary team members during each shift.
  • Conduct daily kitchen briefings and communicate production priorities.
  • Assist with onboarding and training new culinary partners.
  • Promote teamwork, accountability, professionalism, and continuous learning.
  • Provide constructive coaching to improve performance and execution.

Operational Stewardship

  • Coordinate daily food production and kitchen workflow.
  • Monitor prep levels to ensure service readiness.
  • Ensure compliance with food safety, sanitation, and hygiene standards.
  • Oversee opening, operating, and closing kitchen procedures.
  • Monitor equipment functionality and report maintenance needs promptly.

Financial Stewardship

  • Support portion control and recipe adherence.
  • Help minimize food waste and spoilage.
  • Monitor inventory usage and communicate replenishment needs.
  • Assist with inventory counts as assigned.
  • Promote efficient use of kitchen resources.

Cross-Functional Stewardship

  • Collaborate with front-of-house leadership to ensure smooth service.
  • Coordinate with Venue Services regarding facility or equipment needs.
  • Support special events and catering operations.
  • Communicate effectively with the Head Chefs and operational leaders.
  • Foster collaboration across culinary and hospitality teams.

Qualifications

Required

  • Minimum of three (3) years of culinary experience in a commercial kitchen.
  • At least one (1) year in a leadership or supervisory culinary role.
  • Strong knowledge of food preparation techniques and kitchen operations.
  • Working knowledge of food safety and sanitation standards.
  • Ability to lead effectively in a fast-paced environment.

Preferred

  • Culinary degree, diploma, or professional culinary certification.
  • Experience in upscale dining, hospitality, or resort operations.
  • Food Handler's Certificate or equivalent certification.
  • Experience supporting new restaurant openings.
  • Knowledge of inventory management and kitchen production planning.

Working Conditions

This position requires flexibility to work mornings, evenings, weekends, holidays, and special events.

The role requires extended periods of standing and walking while working in a fast-paced commercial kitchen environment with exposure to heat, sharp equipment, and varying kitchen conditions.
